The mango is a tropical fruit from Indian origin, produce by the mango tree, which varies in shape and color. Unfortunately, the potential of its various parts, in particular those often considered as waste, remains underexplored. This study examines the physico-chemical composition of the almonds, peel and pulp of 7 varieties of mango produced in the Korhogo and Sinématiali departments in northern Côte d'Ivoire. Dry matter, titratable acidity (TA), pH, soluble dry extract (SDE), SDE/TA ratio, reducing sugars and total sugars were measured to assess the mango's physico-chemical characteristics. The results showed that the pulp of the Palmer variety (24.37 ± 0.29%) is more acidic. Kent de Torgo pulp contains the highest soluble dry extract (5.07 ± 0.21%), while Kent de Natio has the best SDE/TA ratio (44.54%). Mango pulp is the most acidic and also the sweetest part. To our knowledge, this is the first time this study has been carried out in Côte d'Ivoire.
